These simple cookies are amazing, look pretty and always a hit with a crowd.  Perfect for tea parties, bridal showers, baby showers or cookie exchanges.  They also make a great hostess gift!

Ingredients

1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/2 cup butter or margarine, softened
1 egg
cup flaked coconut
1 cup white vanilla baking chips
1/2 teaspoon coconut extract

Glaze
1/2 cup white vanilla baking chips
1 tablespoon shortening

Instructions:

  • Heat oven to 375°F. In large bowl, stir all ingredients except 1/2 cup chips and the shortening until dough forms. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheet.
  • Bake 9 to 11 minutes or until edges are golden brown. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
  • In small microwavable bowl, melt 1/2 cup chips and the shortening on High 30 to 60 seconds, stirring every 15 seconds, until melted. Drizzle over cookies.

Some of my suggested changes include: switching the coconut extract for vanilla extract, using milk chocolate chips instead of white chocolate, or use colored sprinkles over the top of the freshly drizzled cookies. If you want to go completely from scratch with these cookies, substitute your favorite sugar cookie recipe for the mix.

Store the cookies in an airtight container to maintain their soft, chewy texture. But don't count on them lasting long!
